I’d recommend finding a Japanese-run restaurant. You’ll be able to tell right away because the menu will be in Japanese, there will be choices for your soup base, and the prices will be low. You can also get an idea of authenticity if the bowl is huge and piled with veggies and meat. Another hint can be the smell, though this might not be a thing in the West. If the restaurant absolutely reeks, that means they make the stock in house, so it’s probably really good
