Select Start > Settings > Update & Security > Windows Security > Virus & threat protection > Manage settings (or Virus & threat protection settings in previous versions of Windows 10).
Switch Real-time protection to Off. Note that scheduled scans will continue to run. However, files that are downloaded or installed will not be scanned until the next scheduled scan.

you can disable Windows Defender Antivirus using Registry BUT
This is a friendly reminder that editing the registry is risky, and it can cause irreversible damage to your installation if you don't do it correctly. It's recommended to make a full backup of your PC before proceeding.
Use the Windows key + R keyboard shortcut to open the Run command.
Right-click on the Windows Defender (folder) key, select New, and click on DWORD (32-bit) Value.
Name the key DisableAntiSpyware and press Enter.
Double-click the newly created key and set the value from 0 to 1.
Click OK.
Right-click on the Windows Defender (folder) key, select New, and click on Key.
Name the key Real-Time Protection and press Enter.
Right-click on the Real-Time Protection (folder) key, select New, and click on DWORD (32-bit) Value.
Name the key DisableBehaviorMonitoring and press Enter.
Double-click the newly created key and set the value from 0 to 1.
Click OK.
Right-click on the Real-Time Protection (folder) key, select New, and click on DWORD (32-bit) Value.
Name the key DisableOnAccessProtection and press Enter.
Double-click the newly created key and set the value from 0 to 1.
Click OK.
Right-click on the Real-Time Protection (folder) key, select New, and click on DWORD (32-bit) Value.
Name the key DisableScanOnRealtimeEnable and press Enter.
Double-click the newly created key and set the value from 0 to 1.
Click OK.
After completing the steps, simply restart your computer to disable the Windows Defender Antivirus permanently.
If you change your mind, you can always revert the changes using the same instructions, but on step 3, right-click the DisableAntiSpyware key, and select Delete. Then inside the Windows Defender (folder) key, right-click the Real-Time Protection (folder) key and select Delete to remove key and its content. Finally, restart your device to complete reverting the changes.
Disable real time protection, then disable protection against violation. It will turn itself on agains once you restart you computer, tho, because microsoft dont allow perma disable of their antivirus.
