yi, amumu, rammus, nocturne, xin zhao, morgana, nunu, shyvana, udyr, trundle, wukong(and more) are all fairly easy to learn just try to stick to 1-3 champions of each type(AD, AP, Tank). some champs scale well with multiple build types and can be more flexible across games like nunu(ap, tank), snyvana(ap, ad), xin zhao(ad, sometimes ap), amumu(tank but you can mix in a ap item or 2 like demonic embrace or coinflip it and go full ap and basically act as a living hand grenade), and master yi(ad on hit but theres been a tank build thats been going around). If you have any concerns about how an optimized first clear path would be, Phylaris has made a spreadsheet of leashless jungle clears with videos for a bunch of champions and is still being updated(can be found easily with a google search like "Phylaris jungle clear spreadsheet" and go through the reddit search result)
