You need to counter-pick him, Like Nasus, Rengar, Cammile and Irelia

He's so broken it's hard to counter his ass. Just ask for jg help early game so he can't snowball into late game.

Avoid fighting Yorick when his ghouls are up. You should try to play passively and try your best to survive lane, you can come back in team fights later on anyway so not having a kill in laning phase is not that big of a deal
I always said that I LOVE Yorick because no one knows how to play against him, even with scripts
tl;dr: Before 6, you have the prio. Just punish him with your combo, then kite back before he can auto you.
After 6, you absolutely will NOT win against him if the Doll is up. You have to call your jungler to smite that shit, and if he's not willing to, just focus on farming under tower.
The thing is, once the doll is dead, he will just lose every trade again.

If you'll fight against a yorick you need to burst him. Otherway he will out sustain you.
