The only way you can hide who your following is by making your account private but anyone that you allow to follow you will be able to see who you follow.
If you’re looking at specific content you could just use hashtags as no one can see what hashtags you have viewed.
Also, keep in mind people can see your most recently liked/commented on posts in the activity tab so if you want to browse IG privately don’t be liking or commenting on photos.
